So today Coop and I decided to try and make animal crackers! They aren’t the prettiest things ever but they were pretty yummy and actually tasted quite like the actual thing! We got the cookie cutters from Williams Sonoma and used the recipe on the box. They were an absolute pain to cut out but I’m thinking I may have went about it the wrong way. And the recipe calls to bake them for 14-16 mins and I set my timer for 12 and went and nursed and came back and they were a little overdone! So I’m thinking more like 10 min next time. We had fun though!!

And the final outcome…well…this is actually after we ate all the prettier ones!
And now for the recipe:
2 1/2 Cups flour
1 t baking powder
1/2 t salt
1/8 t nutmeg
1/8 t mace (although I used allspice)
12 T unsalted butter at room temp
1 C sugar
1 t vanilla
Mix flour, spices, and baking soda together. Beat butter with a flat beater on high speed for 2 mins. Reduce to med and add sugar and beat for 2 more mins. Add egg and vanilla and beat for 1 min. Add half the flour and beat on low speed until mixed. Add the rest of the flour mix and beat until dough starts to pull away from the sides (about 2-3 mins). Divide dough into 2 equal balls and form into disc shape and wrap in saran wrap and refridgerate for 2 hours up to 2 days.
After refridgerated, roll out between saran wrap until 1/8 inch thick. This is where it gets tricky…I put the cookie cutters in and they made an imprint. Then froze them for 15 mins and tried to tear away the sides. I think next time I’ll freeze the rolled out dough and then use the cookie cutters to hopefully actually remove the cookie when I imprint it so I don’t have to try and tear away all the extra dough! Then bake at 350 degrees until lightly golden (probably more like 10 mins). They are a little crunchy just like the animal crackers you’d buy in a box!
